In our current application of FUDforum we are using 5-10 forums
and setting up 10 categories within each forum. The forums need to
be private from each other, so we must currently assign users to every
category within their respective forum which can be quite time consuming.

Is it possible to create a group, assign users to that group, then establish
forum and category-level permissions to the entire group rather than by
each individual user? If not now, would this be possible in a future release?

Here is what you can do and I believe this would be sufficient for your purposes.

You can create a new group who's permissions will control access privileges to >1 forum, let's say a category of forums. You then add a user to that group and for that very 1st user setup the permissions you want users in this group to have. To add all subsequent users simply enter the user name and click submit. The forum will automatically default the user's permissions to the permissions given to the previous user added to the group. This makes adding multiple users with the same permissions extremely easy.
